Ingredients:
1 cup besan (gram flour)
1/4 cup water
1 cup sulphurless sugar
1/2 cup water
A pinch of saffron strands (optional)
1/2 teaspoon cardamom powder
Desi ghee for frying
Cashews, almonds, pistachios (optional, for garnish)
Instructions:
Prepare the Sugar Syrup:
In a saucepan, add 1 cup of sugar and 1/2 cup of water.
Stir continuously over low heat until the sugar dissolves completely.
Let it simmer until it reaches a one-string consistency. (You can check this by taking a drop of syrup between your thumb and index finger, and if it forms a single string when you separate your fingers, it's ready.)
Prepare the Batter:
In a mixing bowl, add besan and gradually add 1/4 cup of water, stirring continuously to avoid lumps.
The batter should be smooth and flowing, neither too thick nor too thin.
Fry the Boondis:
Heat Desi Ghee in a deep frying pan.
Using a perforated ladle or a slotted spoon, pour small amounts of batter into the hot oil, and fry until they turn golden brown. (These are the boondis)
Remove the fried boondis and drain excess oil on paper towels.
Make the Ladoo:
Add the fried boondis into the sugar syrup and mix well.
Let it rest for a few minutes so that the boondis absorb the syrup.
Add cardamom powder and saffron strands to the mixture and mix well.
Shape the Ladoo:
Take small portions of the mixture and shape them into round balls (ladoos) while the mixture is still warm. Use greased hands to prevent sticking.
If desired, you can garnish each ladoo with chopped nuts like cashews, almonds, or pistachios.
Let them Cool:
Allow the ladoos to cool completely before serving or storing them in an airtight container.
