Recipe: Homemade Paneer Jalebi with Lynk Ghee

Ingredients:

    • 1 cup fresh paneer, crumbled
    • 1 cup all-purpose flour
    • 1/2 cup semolina flour
    • 1/4 teaspoon baking powder
    • 1/4 teaspoon cardamom powder
    • Pinch of saffron (optional)
    • 1/4 cup milk
    • Oil for deep frying
    • Sugar syrup (recipe below)

For the sugar syrup:

    • 2 cups sulphurless sugar
    • 1 cup water
    • 1/4 teaspoon cardamom powder
    • Few strands of saffron

Instructions:

    1. Grind the paneer in a blender to a smooth paste.
    1. In a large bowl, combine the paneer paste, flours, baking powder, cardamom powder, and saffron (if using). Gradually add milk, mixing until you have a smooth and dropping consistency batter.
    1. Heat oil in a deep pan over medium heat.
    1. Prepare the sugar syrup by boiling sugar and water together until it reaches a one-string consistency. Add cardamom powder and saffron. Keep warm.
    1. Fill a piping bag with the batter and pipe small spirals into the hot oil.
    1. Fry the jalebis until golden brown and crispy.
    1. Immediately transfer the jalebis to the warm sugar syrup and soak for a few minutes.
    1. Serve warm or at room temperature.

Tips:

    • Make sure the oil is hot enough but not smoking, otherwise the jalebis will burn.
    • If the batter is too thick, add a little more milk. If it's too thin, add a little more flour.
    • Don't overcrowd the pan when frying the jalebis.
    • You can garnish your jalebis with chopped nuts or pistachios.

Enjoy your homemade Lynk Ghee Paneer Jalebi!
