Here's a our recipe for making Boondi Ladoo:

Ingredients:


1 cup besan (gram flour)
1/2 cup water
1 1/4 cups sulphurless sugar
1/2 cup water
1/4 teaspoon cardamom powder
2-3 drops orange food color (optional)
2 tablespoons chopped nuts (cashews, almonds, pistachios)
Ghee or oil for frying


Instructions:


Prepare Sugar Syrup:

In a saucepan, combine sugar and water. Heat it over medium heat until it reaches one-string consistency. Add cardamom powder and mix well. Keep it warm.


Prepare Batter:

In a mixing bowl, add besan and water. Mix it well to form a smooth, lump-free batter. The batter should have a pouring consistency, similar to pancake batter. If it's too thick, add a little more water.


Fry Boondi:

Heat Desi ghee in a deep frying pan over medium heat. To check if the oil is hot enough, drop a small amount of batter into the oil. If it sizzles and rises to the top, the oil is ready.
Hold a perforated spoon or slotted spoon with holes over the hot oil. Pour a ladleful of batter over the spoon, and tap it gently so that small droplets of batter fall into the oil. Fry until the boondis are golden brown and crisp. Remove them from the oil using a slotted spoon and drain excess oil.


Make Ladoos:

Once all the boondis are fried, let them cool slightly. Then, transfer them to the warm sugar syrup. Mix well until all the boondis are coated with syrup.
Let it sit for a few minutes until the mixture is cool enough to handle but still warm.
Grease your palms with a little ghee and shape the mixture into small round balls (ladoos). Press a few chopped nuts into each ladoo while shaping, if desired.


Serve:

Let the ladoos cool completely before storing them in an airtight container. Enjoy your homemade Boondi Ladoos!
